Delicious, easy one-dish recipe that takes less than 30 minutes to make.
1 Tbsp olive oil
1 ½ c onion
2 cloves garlic
2 c chicken broth
1 Rotel can rotel
½ c heavy cream
8 oz pasta
1 c monterey jack cheese
⅓ c scallions
1 lb kielbasa sausage
- Add olive oil to a skillet over medium high heat until smoking. Add sausage and onions cook until lightly browned about four minutes. Add garlic and cook until fragrant, about 30 seconds.
- Add broth, tomatoes, cream, pasta, salt and pepper and stir. Bring to a boil, cover skillet and reduce to medium low. Simmer until pasta is tender.
- Remove skillet from heat and add half a cup of cheese and scallions.
